Al Babaloo's - morning/afternoon after the night before, mind resuscitating soup


This recipe will produce 6-8 servings (ideal to take along pre-made to a festival). It also tastes better if left for 12+ hours in the fridge after cooking before you eat it - just make sure that you always fully re-heat it to boiling point.

1 large white onion - 1cm (1/2") dice
1/2 orange bell pepper - 1cm (1/2") dice
1 large carrot - sliced like matchsticks
2 cloves garlic - chopped
3 tsp ginger root - sliced like matchsticks (DO NOT use powdered ginger)
2 tsp jalepeno (chili) - finely chopped
4 tbsp finely chopped spinach
1 can/400g cooked butter beans
1 cup macaroni pasta
2 litres (3.5 pt) vegetable stock (DO NOT use stock cubes that have MSG [monosodium glutamate] in them, this'll destroy the beneficial qualities of the soup)
1 measure/shot (30ml) Vodka (preferably the genuine, hard core stuff from Russia - but any good quality brand will suffice)
Olive oil for frying

Cooking method:

Heat olive oil in large 2.5+ litre (4pt +) pan
Very gently fry onion and pepper until just soft - NOT brown
Add carrot, garlic, ginger, jalepeno - continue frying for a couple of minutes
Add stock, butter beans, spinach, vodka, macaroni
Increase heat and bring to boil, stirring
Reduce heat to very low and simmer, covered for 45 mins
Season with ground black pepper and salt

For those carnivores among us -
You can include: 2 chicken breasts - 2cm (1") dice - pan fried until sealed and then added at the same time as the stock
Substitute chicken stock for vegetable stock
