Tomato Lentil Soup

Serves 4(ish)

3lb fresh tomatoes - peeled
1 pt stock (vegetable or chicken)
1 leek - sliced
1 large red onion - chopped
1 large red pepper - chopped
3 cloves garlic - chopped
1 medium sweet potato - small dice
2 tsp ground coriander
250g red lentils
1 tbsp soy sauce
2 tsp worcester sauce
2 bay leaves
2 tbsp fresh chopped parsley
2 tbsp fresh chopped basil

Cooking method:

Heat olive oil in a large pan
Gently sauté (fry) leek, red onion, red pepper and garlic until soft
Add red lentils, ground corriander and fry for 1 min
Add sweet potato, tomatoes and fry for 1 min
Add stock, soy sauce, worcester sauce and bring to boil
Reduce heat and simmer (covered) very gently for 40 mins
Before serving add parsley, basil and season with salt and pepper
