Red Pepper Humous

1 large red pepper -halved
1 can chickpeas
1 garlic clove - crushed
3 tbsp tahini
2 tbsp lemon juice
2 tbsp olive oil
salt & pepper

Method:

Grill peppers until skin is blackened, peel, chop & put in blender
Drain chickpeas, save the liquid
Put chickpeas, garlic, tahini, lemon juice & olive oil in blender
Puree & add reserved chickpea juice until creamy
Season to taste
