Cheese Cake


Serves 8 (large slices)

Base

15 Digestive biscuits (USA Graham Crackers)
1/2 cup melted butter
2 tbsp sugar

Cooking method:

Crush biscuits (Graham Crackers)
Stir in sugar
Add butter, mix thoroughly
Press into pie dish (9" [23cm] diameter)
Bake for 5 min at 180c/350f/gas 4

Filling

4 egg yolks
3 tbsp sugar
500g/1lb cream cheese (room temperature)
1 tsp vanilla essence

Cooking method:

Beat egg yolks, vanilla and sugar together until slightly thickened
Add cream cheese and beat well
Fill pie shell with mixture
Bake for 30 min at 160c/325f/gas 3
Allow to cool
before adding topping

Topping

300ml1/2 pint sour cream
2 tbsp sugar
1 tsp vanilla essence

Cooking method for topping:

Mix all three ingredients together thoroughly
Pour over top of already baked Cheesecake
Bake for 5 min at 230c/450f/gas 8
Allow to room cool for 30-60 min
Refrigerate
